Several recent research have proved the health benefits of consuming natural substances. Lycopene and ascorbic acid, two fruit phenolics, have potent antioxidant, anti-inflammatory, antimugenic, and anticarcinogenic properties. Color, moisture, pH, water activity, total phenolic compounds, ascorbic acid, and lycopene concentration were all examined as characteristics related to fruit quality and climatic conditions in this study. Different solvents, such as methanol, ethanol, and water, were used to extract Diospyros kaki cv. chocolate fruits. When considering Diospyros fruits with peel, total polyphenolics of each extract were shown to be higher in methanolic extract and lower in ethanol using the Folin-Ciocalteu method. Significant differences in the amounts of these characteristics were discovered across geographic regions. The findings suggest the use of Diospyros kaki cv. chocolate fruits, a Portuguese cultivar, as a functional food with strong antioxidant capacity that may protect humans from oxidative stress.
