Metal Content and Stable Isotope Determinations in Daily Food from the Romanian Market | Chapter 1 | Current Perspectives in Agriculture and Food Science Vol. 3

Food character and safety must be a perpetual concern both for consumers and for experts. The education for kind and the active engrossment, coherent and sustained by united states of america, through the implementation of a character strategy at the communal level should be the main "forces" that can contribute to the exercise and certification of value management systems in the agri-foodstuff sector. Meat and cell products are essential parts in the human diet; therefore, their contamination accompanying heavy metals plays a important role honestly health. The aim of this work search out present the elemental and isotope descriptions of two important foodstuff matrix, pork core and hen cell. Thus, the concentrations of several human essential trace and poisonous elements were analyzed in 60 animal-located foods, containing pork meat and domesticated bird eggs, composed from the Romanian market. The inductively connected plasma mass spectrometry method (ICP-MS) was used for the determinations. Regarding cooking safety, the poisonous element concentrations in most examined samples were below the maximum granted levels set by Romanian and European legislation.Along with ICP-MS, Isotope Ratio Mass Spectrometry (IRMS) was used to get the 13C isotopic fingerprints of investigated samples, to emphasize the augmenting regime of mammals, based on C3 and/or C4 plants.
