Study on the Effect of β-Cyclodextrin on Phospholipids and Cholesterol of the Milk Fat Globule Membrane | Chapter 12 | Emerging Challenges in Agriculture and Food Science Vol. 4

 Phospholipids, like cholesterol, are found on the milk globule membrane (MFGM). The goal of this study was to see how -cyclodextrin (β-CD) affected phospholipids and cholesterol in raw pasteurised milk, in order to remove cholesterol from the milk fat. Total phospholipids in β-CD treated milk reduced marginally, but the effect of the β-CD was not significant. β-CD is a highly effective oligosaccharide for eliminating cholesterol from milk, with a reduction of more than 97%, and has no effect on individual phospholipids in the milk fat globule membrane (phosphatidylcholine, phosphatidylethanolamine, sphingomyelin, phosphatidylinositol, and phosphatidylserina).
