Nutritional Quality and Health Benefits of Vegetables | Chapter 2 | Emerging Trends in Disease and Health Research Vol.4.

 The nutritional content and health benefits of the major vegetable categories are reviewed and discussed in this article. Each vegetable group has its unique set of nutrients and bioactive chemicals, which distinguishes it from other vegetable groups and vegetables within its own group. Vitamins, minerals, dietary fibre, and phytochemicals are all found in vegetables, making them essential for a well-balanced diet. Vegetables in the daily diet have been related to better gastrointestinal health, clear vision, and a lower risk of heart disease, stroke, chronic diseases like diabetes, and several cancers. Some vegetable phytochemicals are potent antioxidants that are hypothesised to reduce the risk of chronic disease by protecting against free radical damage, altering metabolic activation and detoxification of carcinogens, and even regulating mechanisms that affect tumour cell behaviour. Potassium is a nutrient that helps to keep blood pressure in check. Vegetables in general have the ability to protect humans against chronic illnesses. And it has the potential to help with a variety of nutrition issues. Because each vegetable contains a unique combination of nutrients and bioactive compounds, a wide variety of vegetables should be taken to ensure that an individual's diet comprises a diverse range of nutrients and bioactive compounds, as well as all of the health advantages.
