Germination Pattern and Behavior of Antioxidant Enzymes in Spinacia oleracea Seedlings in Saline Environment | Chapter 08 | Emerging Challenges in Agriculture and Food Science Vol. 4

 Spinach (Spinacia oleracea L.) is often regarded as a functional food, owing to the numerous beneficial components it contains, such as vitamins, minerals, phytochemicals, bioactive and antioxidant substances, which promote health beyond basic nutrition. At high salinity, the majority of agricultural crops are subjected to a variety of abiotic and biotic stressors, which sadly limit the applicability of highly nutritious plants. Because the majority of the land used for vegetable agriculture in Karachi, Pakistan is saline, the research was carried out to learn how spinach plant seedlings achieve salinity resistance and healthy growth. Antioxidant enzymes found in spinach are being studied to understand how they react at various phases of seedling germination. The findings were astounding and revealed a critical element to plant behaviour amid oxidative stress in a severe saline environment. Spinach seedlings show a remarkable ability to germinate at a concentration of 800 mM NaCl, resulting in a significant increase in average weight and soluble protein content. The tolerance of enzymes including catalase, ascorbate peroxidase, guaiacol peroxidase, superoxide dismutase, and glutathione reductase is raised after oxidative stress in a saline environment. In the germination stage 1, ascorbate Peroxidase is active even at 600 mM NaCl. The activation of antioxidant defence mechanisms in Spinacia oleracea at an early stage of germination may aid the plant's survival under adverse conditions and so protect its nutritional content.
