Study on Biolog Identification of Fermenting Yeasts from Fermented Teff (Eragrostis teff (Zucc.)) Dough | Chapter 7 | New Visions in Biological Science Vol. 7

 Background: Teff (Eragrostis teff (Zucc.)) flour is used to make injera, which is a type of baked product. It is a staple cuisine enjoyed by two-thirds of Ethiopia's population of roughly 100 million people on a daily basis. The fermentation process is carried out by consortia of microorganisms because it is a product of naturally fermented dough. Because it is gluten-free and a whole grain product, teff injera is gaining popularity in the developed world. As a result, the goal of this research was to extract and identify yeasts from Teff (Eragrostis teff) dough fermentation.

Samples were gathered from several sources in Addis Ababa, Ethiopia, over the course of the study. From December to April 2015 to June 2016 G. C., laboratory isolation and identification of isolates were carried out at Holeta Biotechnology Institute, Microbial Biotechnology laboratory, and Ethiopian Institute of Biodiversity, Microbial laboratory.

Methodology: 200 dough samples were obtained from households at various stages of fermentation. Twenty (20) yeast isolates with various cultural features were chosen and omnilog identification techniques were used to further identify them.

Pichia fermentans, Pichia spp., Rhodotorula aurantiaca B, Pichia fluxuum, Candida humilis, Trichosporon beigelii B, and Cryptococcus albidus Var aerus were identified as the seven yeast isolates recovered from teff dough.

Conclusion: This research has confirmed the existence of diverse yeast in fermenting teff dough and also supports the involvement of consortia of various microorganisms during the fermentation process.
