Evaluation of Drying Parameters and Water Activity of Dried Banana for Improvement of Production | Chapter 8 | Science and Technology: Recent Updates and Future Prospects Vol. 11

 

Drying is one of the unitary processes most used in the food industry but is still a complex and little-understood operation, especially regarding the selection and control of the process conditions to maintain end product quality. The drying curves for the dried banana slices were obtained using three different drying temperatures. Drying times of 51, 36, and 30 hours were required at temperatures of 50°C, 60 °C, and 70 °C, respectively, to achieve a moisture content of 23.5%. During the drying process, the water activity in the fruits was measured using the AQUALAB apparatus with direct reading. The exponential model was fitted to the experimental data using non-linear regression analysis. The coefficient of determination of the model was R 0.99. Water activity was determined throughout the drying process for the three treatments. The relationship between water activity moisture content and banana sorption isotherms content was studied. The data indicated that water activity decreased with drying time and increased with moisture content at all three temperatures. The sigmoid model was fitted to the experimental data by non-linear regression and the result of the fit was satisfactory (R2´0,995). The banana moisture content varied in function of the water activity and can be described by a four-parameter sigmoid polynomial model.

Relevance of Business Ethics: A Navigating Force for Global Sustainable Quality Generation in Organizations | Chapter 5 | Business, Management and Economics: Research Progress Vol. 5

Business ethics has emerged as one of the prominent ringtones of the millennium organizations in present times. Notwithstanding the social uncertainties and the business fluctuation in vogue the essentiality and applicability of business ethics is the call of the hour.  The chapter highlights the rationale of business ethics and attempts to explore the key domains and items that may be considered relevant for present-day business houses. The literature of the paper hovers around rediscovering Goals and ethics, diversity management and ethics, entity value on decision making, legal perspective of business ethics, diversified ethics and gender differentiation. Sensitivity of Haden, Kent, Palmer, and Keitt Mango (Mangifera indica L.) Fruits to Ambient and Transit Temperature Storage Conditions for Ripening and Shelf-life Studies | Chapter 2 | Current Research Progress in Agricultural Sciences Vol. 5

Background: The Ghanaian mango industry relies heavily on Florida cultivars (Haden, Kent, Palmer, and Keitt) for fresh and processed mangoes traded locally and for export. Haden, Kent, Palmer, and Keitt mango cultivars all perform well under the climatic conditions in Ghana. 

Purpose: Physiologically matured fruits of Haden, Kent, Palmer, and Keitt mango varieties were used for the experiment. The fruits were held at ambient (29-31oC) and simulated transit temperature (10-13oC) conditions for ripening and shelf life studies. Quality, which includes fruit firmness, ripening, weight, and spoilage, was assessed and used to determine the ripening quality and shelf life of stored fruits.

Research Method: A Completely Randomized Design with four replications was used. For each of the four varieties, five mango trees were sampled at random in each of the four replications of a mango plantation when fruits were physiologically matured. Fruits were randomly picked from these sample trees to accomplish the objectives of the study. A computerized texture analyzer (TA-XT2) was used to determine fruit firmness and the ‘bio-yield point’ of the mangoes by penetration. 

Findings: For both ambient and simulated-transit temperature conditions, Kent (4.09 days and 3.85 days, respectively) and Keitt (4.08 days and 3.92 days, respectively) fruits stored longer. Haden fruits ripened significantly earlier (9.50 days and 3.5 days, respectively) than Keitt fruits (11.01 days and 5 days, respectively). Ripening time was statistically not different (p>0.05) among Haden, Kent, and Palmer fruits. Softness, color, and decay were limiting quality factors for all mango fruits stored at both temperature conditions. Higher shriveling rates were observed in Haden and Palmer fruits with a slight preponderance of the former, for both conditions. Average weight loss was highest (6.50 % and 3.31%, respectively) for Haden and lowest (4.09% and 2.34%, respectively) for Keitt, but generally lower in fruits stored under transit conditions.

Conclusion: The study concluded that Kent and Keitt fruits store better than Haden and Palmer fruits under both ambient and transit conditions and are therefore recommendable for sea freight or for longer distances where relatively much time is spent before delivery, while Haden and Palmer fruits are recommendable for air freight. The attributes obtained from the quality evaluations for the different temperature regimes showed that a single quality attribute cannot be used to express the loss of quality of mango fruit over the normal physiological range of mango fruit growth and development.

Research Limitations: No limitations to the report.

Originality/Value: A single quality attribute cannot be used to express loss of quality of mango fruit over the normal physiological range of mango fruit growth and development.

Edible Coatings from Plant Leaf Extracts: Preserving Quality and Mitigating Fungal Contamination in Stored Tomato (Solanum lycopersicum L.) Fruits | Chapter 3 | Current Research Progress in Agricultural Sciences Vol. 7

The objective of this work was to determine the effect of Moringa, Neem and Bitter leaf as edible coatings for extended storage life and quality retention of tomato fruits. The presence of decay is a very serious defect which renders tomatoes unmarketable. Fungi are the most important and prevalent pathogens infecting a wide range of fruits and causing destructive and economically important losses of fruits during storage, transportation and marketing. The use of edible coating has also received more attention in recent years due to the growing interest in reducing environmental pollution, the need to prolong the shelf life of foods and the increasing demand for healthier ecological foods. The impact of extracts from plant leaves as edible coatings on quality retention of tomato (Solanum lycopersicon L.) fruits after inoculation with fungal isolates was investigated. The experiment was conducted in the Botany Laboratory of the Benue State University, Makurdi. Healthy tomato fruits of the Roma variety were collected at semi ripe stage from the experimental farm. A total of five fungi namely; Aspergillus flavus, Penicillium waksmanii, Lasiodiplodia theobromae, Fusarium oxysporum and Colletotrichum asianum were artificially inoculated into the healthy tomato fruits. The inoculated tomato fruits were coated with leaf extracts of Moringa, Neem and Bitter leaf at 80%w/v and 100% w/v and stored at room temperature. Quality parameters of tomato fruits evaluated include; Beta-carotene content, Lycopene content, pH and Total soluble solids. Analysis of Variance (ANOVA) was used to analyze data. Leaf extract of Moringa, Neem and Bitter leaf at 100% w/v gave the best quality retention of tomato fruits. There was a significant increase (P≤0.05) in Beta-carotene and lycopene content of tomato fruits treated with Moringa, Neem and Bitter leaf extracts at 100% w/v over the storage period. pH and total soluble solids content of tomato fruits treated with Moringa, Neem and Bitter leaf extracts decreased with increased rate of concentration over the duration of storage. Lycopene is the major carotenoid compound in tomatoes, it gives the fruit its characteristic red colour. It was observed that lycopene content from all treatments increased as the concentration increased over storage time with the untreated having the least lycopene content. The increase in lycopene content of fruits treated with leaf extract might be due to the faster ripening rate of fruit which leads to the conversion of chloroplasts to chromoplasts and lycopene accumulation in the internal membrane system. Plant extracts have the potential to maintain the quality parameters of tomato fruits during storage. The use of leaf extract of Moringa, Neem and Bitter leaf at 100% w/v concentration should be utilized in coating tomato fruits to maintain their quality parameters during storage. Improvement in methods of coating and the number of additives should be enhanced to effectively impact the overall quality of food products during storage.

Causes of Attrition of B-school Faculty Members at Bangalore, India: An Empirical Study | Chapter 5 | Progress in Language, Literature and Education Research Vol. 9

 

In the scenario of increasing demand for management education, the number of B-schools has mushroomed, but unfortunately, required quality is not maintained, which has led to a lack of job opportunities and high expectations from employers. Knowing the dearth of quality education and increased rate of faculty member attrition in the last few years with the increase in the number of B-schools in Bangalore, the management has the challenge of conjoining its goals with the faculty aspirations, in order to successfully overcome the problem of high attrition and attracting and retaining the best performers. To solve the problem of attrition of faculty members, retention of faculty members is inevitable for the success of B-schools. In order to ensure quality education, there is a need for strategies for recruiting and retaining talented faculty members. The researcher has used 12 variables/dimensions to address the research questions. For the study, the sample size is 455 (407 faculty members from VTU and BU affiliated B-schools and 48 management members from the same VTU and BU affiliated B-schools). The proposed study is a descriptive qualitative research. The investigation is carried out at B-schools affiliated with VTU and BU in the city of Bangalore. The data collected is tabulated and analyzed using the SPSS 20.0 version, correlation analysis, group statistics, and ANOVA with more emphasis on factor analysis, percentage and ranking methods. To know in detail the general causes of attrition of faculty members in B-schools and its impact on individuals and organizations has also been studied and presented.

The important findings depicted that the majority of the management respondents agree that the attrition is less. But the majority of the faculty members, have agreed that, they joined the institution because of vacant positions, and this has recorded the highest percentage against the joining of faculty members because of the increase in the intake of students. An interaction with a few ex-faculty members, based on their exit interviews in a few institutions revealed that there is a gap between the responses of management and faculty members. The need of the hour for every B-school is, motivating and retaining such faculty members and to think and adopt a vigorous human resource policy which would really give confidence about the institute in their minds. Faculty members are keen on such strategic career moves which assure employment and satisfaction towards job security.

Determination of the Enzymatic Kinetics of Polyphenoloxidase in Different Coffee Varieties of Ecuador | Chapter 10 | Research Advances and Challenges in Agricultural Sciences Vol. 8

 

In this work, the enzymatic kinetics of Polyphenoloxidase (PPO) in different varieties of Arabica coffee (Typico, Caturra and Salchimor) was studied. The optimum pH and temperature of the PPO, the enzymatic activity (U) and the Michaelis – Menten constant were evaluated. To determine the enzymatic activity the JENWAY 7305 UV- Vis spectrophotometer with a wavelength of 410 nm was used. The optimum temperature and pH of the PPO were found to be 50 and 7.0 respectively, being constant in the coffee varieties studied. The affinity of the enzyme for the substrate as well as the activity of the PPO was studied using catechol as a substrate. The results in the different varieties were: Typical (KM=0.622 mM; and 6234.32 U/mL) Salchimor (KM= 0.822 mM; and 5612.10 U/mL) and Caturra (KM= 0.933 mM and 3710.86 U/mL).

Finally, the oxidation of catechol (substrate) was evaluated by observing the time of disappearance that was set at 160 seconds for the variety with the highest activity.

Assessing the Quality of Undeveloped Spring Water Consumed Directly by the Local Population of Kasaï in the Democratic Republic of Congo | Chapter 6 | Research Advances in Environment, Geography and Earth Science Vol. 2

Objective: The present study assesses the quality of undeveloped spring water consumed directly by the local population of the province of Kasaï in the D.R. Congo in order to satisfy sustainable access to drinking water in the province of Kasaï.
 
Materials and Methods: This study was conducted in the province of Kasai, in the villages of Kamupafu, Kabilowa, Kayonga, Kankondo, Kankala, Lunyanya and Kumbikumbi in the town of Tshikapa. The study covered the period from September 29 to October 24, 2022.
 
The water samples taken (27) were prepared in the laboratory according to standard procedures and a series of physico-chemical and microbiological characterization analyzes were carried out in the field and in the laboratory. The data collected was processed and analyzed using SigmaStat 11.0 statistical software.
 
Results: Among other results obtained, it appears that the average pH was between 4.6±0.15 and 6.96±0.43; the EC between 12.91±0.51 µS.cm-1 at the Dido/Milonga spring and 26.87±3.00 µS.cm-1 at the Tshitenga spring. The turbidity, the soluble ion (NO3-, F-), and arsenic (As) contents in the water reveal that with the exception of the turbidity in the Kamitutungulu spring (10 ± 1.04 NTU), the concentration of the other elements in the water from all the springs studied complies with WHO recommendations for drinking water quality. In addition, the average values (CFU 100 mL-1) of total coliforms vary between 18 (KAMANKONDE/ROBERT) and 81 (KATOKA 3) for the water of all the springs.
 
Conclusion: Scientific support is therefore suggested for the various actions carried out by numerous organizations or research centers in terms of drinking water supply and hygiene through the establishment of village water supply structures, communication for a change in behavior and socio-economic actions in favor of disadvantaged grassroots communities in a sustainable perspective.

Post-Harvest Management of Fruits and Vegetables | Chapter 9 | Current Perspectives in Agriculture and Food Science Vol. 7

 Fruit and vegetable harvest management must be done well in order to maximize quality, reduce post-harvest losses, and increase shelf life. The reasons of post-harvest losses, different post-harvest technologies, and treatments meant to reduce losses and maintain the quality of harvested product. Physiological changes, mechanical damage, incorrect handling and transportation, unfavorable weather conditions, and pest infestations are some of the causes of post-harvest losses. Many post-harvest technologies and treatments have been developed to address these issues. These include the use of technologies to delay senescence and decay, controlled atmosphere storage to control oxygen and carbon dioxide levels, and pre-cooling techniques to lower temperature and slow down physiological processes. Post-harvest procedures including washing, sorting, grading, and waxing also aid in lowering microbial contamination and extending shelf life. Additionally, environmentally friendly ways to maintain freshness while minimizing the impact on the environment are provided by sustainable packaging. Real-time monitoring of the supply chain for environmental conditions and produce quality makes it possible to take prompt action to reduce losses and improve storage conditions.

Effects of Classroom Atmosphere on the Quality of Learning (QoL) for Students Learning | Chapter 4 | Progress in Language, Literature and Education Research Vol. 6

Learning is the most important issue in teaching and regarding class atmosphere is one of the main issues that has special place in partial quality of learning. Teacher creates attractive class by applying proper management skills that makes positive and active relationships between him/her and his pupils. This study was performed to investigate the relationship of Atmosphere on the Quality of Learning (QoL). This study was done in Guilan University of Guilan that about 0.5 of students were selected through cluster sampling method with regard to the size of population (7200 students) and through systematic random sampling. 360 persons were selected and 357 questionnaires were filled and returned among 360 distributed questionnaires in various disciplines. Also 35 academic staffs (about 0.1) were participated in this research for conducting interview. Instruments for collecting the information of questionnaire have been researcher-made and interview. Interview with dear faculty members was about the impact of mental state of on quality of learning. Descriptive- analytic method has been used in this research. In all cases null hypotheses rejected and research hypotheses were confirmed. Also in analysis of interview with academic staffs that questions were related to research main hypotheses, much emphasis has been put on the effect of factors influencing on class atmosphere and quality of teaching and learning. It should be stated that there is a positive and direct relation- ship between class atmosphere and its factors (order and organization in class, clear- ness of rules in class academic staff control over the class, academic staffs and student mutual respect) and quality of learning. Clearness of rules of class results in relaxation in professor and student and in fact helps both of them to move toward goals of class and qualitative improvement of learning.

Comprehensive Analysis of Quality Management in Pharmaceutical Manufacturing Process | Chapter 2 | Advanced Concepts in Pharmaceutical Research Vol. 2

 The objective concerning this topic is to study the limits which are responsible for the status output. The data stresses the importance of quality in the drug industry, defining it as intersection customer needs and expectations. Quality limits include fitness for use, consumer satisfaction, and conformance to requirements. Quality Assurance (QA) focuses on processes, record-keeping and audits, encompassing all determinants affecting product kind, including Good Manufacturing Practices (GMP). Current Good Manufacturing Practice (cGMP) regulations are main to ensuring consistent drug quality and safety. Quality Control (QC) manages daily quality administration, from raw material testing to things produced release, requiring well-trained work force and suitable equipment. Calibration asserts equipment accuracy for trustworthy measurements. Validation ensures processes and orders consistently produce safe and productive products, covering supplies, processes, cleaning, computer systems, strength testing, regulatory agreement, and comprehensive documentation. These ingredients collectively uphold drug quality and regulatory agreement.

Quality and Safety in Phlebotomy Units of Medical Structures | Chapter 7 | Advanced Concepts in Medicine and Medical Research Vol. 1

 This item's purpose is to "label the various issues an architectural finish our phlebotomy units, to implement an bettering plan with effective corrective conduct, and to assess the pertinence of those actions to phlebotomy by providing practitioners accompanying precise pieces of advice on the implementation working and carrying out their routine tasks." To collect a adequate sample, a proper pre-examining phase method is crucial; dangerously, this stage is rife accompanying hazards and mistakes. In this context, we administered a survey using a inquiry that was sent to the lab directors in the cities of Lubumbashi, Likasi, and Kolwezi in the Democratic Republic of the Congo. 3588 reactions were validated and resolved. Our results showed that the first line of the well-being level is more represented by Health Centers (HC), attended by Polyclinics, Reference Health Centers (RHC) and Hospitals Reference Generals (HRG). We have observed alternatives in the implementation of the citation standards on good sipping practice both in agreements of general institution and in terms of risk administration, for the staff and for the patient. What demands training, system which controls organization of a quality management method in phlebotomy units.

Irradiation on Quality Parameters of Mushrooms: A Post- Harvest Processing Analysis | Chapter 2 | Current Perspectives in Agriculture and Food Science Vol. 5

 This episode aimed to study the effect of Gamma Radiation convert on physical and pertaining to food parameters of mushroom (2015-17). Whereas, slight but insignificant changes were seen in moisture, oxygen, fibre and protein content of irradiated mushrooms at 0.25 kGy. The reduction in dampness content of non-irradiated mushrooms was more (Fig. 1) from initial (91.23%) to final Phase (79.01%) of the exploratory period distinguished with mushrooms irradiated at 0.25 kGy (92.20% to77.42%) and 0.75 kGy (92.00% to 77.53%).  All of the samples of mushrooms had considerably higher sodium and potassium fillings. Gamma radiation enhanced the useful life of product of mushrooms while maintaining their accepted quality outside affecting their physico-synthetic quality.

Determining the impact of Vermicompost and Organic Formulations on Yield and Quality of Soybean | Chapter 2 | Emerging Issues in Agricultural Sciences Vol. 5

 This branch highlights the effect of Vermicompost and Organic Formulations on Yield and Quality of Soybean Grown on Vertisol. Soybean [Glycine top (L.) The field experiments were transported during kharif-2020 and kharif-2021 at Research Farm, Department of Soil Science and Agril. Chemistry, College of Agriculture, VNMKV Parbhani, to study the effect of vermicompost and basic formulations on yield and quality of soybean mature on Vertisol. The experiment was laid in factorial randomized block design accompanying twelve situations and three replications. The yield parameters like no. of pods, children and straw yield and kind parameters like protein content and test burden showed important increased accompanying the application of RDF as distinguished to other situations. The organic formulations advance the microbial and enzymatic action in soil and it provides able supply of nutrients at fault-finding growth stages of soybean in addition to presence of progress regulators donating to higher hay yield. The maximum benefit among natural formulation cures was found when Beejamruth, Jeevamruth, and Pancahgavya (OF3) were used together rather than alone. Sorption Behavior of Deltamethrin in Mediterranean Soils | Chapter 7 | Emerging Issues in Agricultural Sciences Vol. 2

The aim of the study was to search the adsorption and desorption processes of Deltamethrin in two contrasting agricultural soils (ammophilous and clayey soils) from Loukkos plain, using Batch equilibration order. The study is part of a big program to update facts on pesticides for safer use and happening of guidance and managing for their application. The isotherms for adsorption and desorption were expressed using the Freundlich model. The adsorption coefficients, that were used to evaluate this wonder, were calculated utilizing linear regressions. The results granted that adsorption and desorption processes of Deltamethrin on soils were well described for one Freundlich model. The Freundlich's adsorption coefficient (Kd) principles for Deltamethrin in the clayey and sandy soils were 3.914 and 1.503 mL.g-1, individually. Hence, the properties and the arrangement of the soils have great impacts on the sorption devices of Deltamethrin. The results also displayed that the irreversibility of the adsorption process is more important when the adsorption capacities of the soils and their brick content are high. Our study told a high risk of the occupancy of Deltamethrin in the Loukkos groundwater, particularly in arenicolous soils, which have reduced retention competency due to their reduced clay and natural resources contents.

Factors Influencing the Consumers Behavior of Branded Milk and Milk Products in Tirupati City of Andhra Pradesh, India | Chapter 8 | Current Topics on Business, Economics and Finance Vol. 3

 This division aims to analyze the determinants influencing the buyers behavior of tainted milk and milk products in Tirupati City of Andhra Pradesh, India.  Tirupati City, an main Tier-II city in the Rayalaseema region of Andhra Pradesh, was actively chosen for the study. Based on the chief population in downward order, twelve wards were preferred. From each ward, 10 shoppers were chosen, comprising a sample size of 120 customers. The verdicts of Principal Component Analysis inferred that the services behavior of tainted milk and milk products was affected by five factors that is to say Consumer preference determinant (Family, Advertisement, Quality, Offers, Package Design, Hygiene in production and Fat content) All determinants affecting services preference had determinant loadings that were (4.966), Product attribute factor (Price, Flavor, brand Image) and determinant loadings were (1.993), Perishable factor (Freshness, image) with determinant loading (1.427), Referral determinant  (Friends and Relatives, Wide Pnroduct Range and Product Availability) total factor loadings of Referral Factor (2.066) and Convenience determinant (Packs in suitable quantities and Texture). Factors doing convenience accompanying total factor stowing were (1.407).

From the business-related viewpoint also situation T4 performed high-quality with B:C (3.89).

From the economic point of view also treatment T4 performed the best with B:C (3.89).
