Functional, Phytochemical and Processing Properties of Proso Millet (Panicum milaceum. L)- A Potential Nutri Millet | Chapter 04 | Recent Progress in Plant and Soil Research Vol. 3

 Proso millets are environmentally friendly smart grains that are high in minerals and phytochemical substances that help people maintain their health. Proso millet contains bioactives that protect against metabolic syndromes and lifestyle disorders. Millets' hypoglycemic effects are well-known, and due to their functional key ingredients, millets are being used in the valorization of food items. Despite its health benefits and agronomic and economic potential, millets have fallen out of favour, particularly in developing nations, and it has yet to reach a large population, possibly due to processing challenges and a decline in production area. This article contains studies and research findings on the proso millet's agronomic benefits, post-harvest treatment practises, nutraceutical and functional qualities, and methods of valorization.
