Effects of Thermal and Non -Thermal PreProcessing Methods on Physical Attributes of Jackbean (Canavalia ensiformis) Seed | Chapter 7 | Challenging Issues on Environment and Earth Science Vol. 6

 On the physical properties of Jackbean (Canavalia ensiformis) seed, the impacts of thermal and non-thermal pre-processing procedures were investigated. Roasting and autoclaving as thermal pre-processing methods and sprouting as a non-thermal pre-processing method were used on jackbean seeds received from the germplasm unit of the International Institute of Tropical Agriculture (IITA) in Ibadan, Oyo State, Nigeria. A digital venier calliper was used to measure length, width, and thickness, while a formular was used to calculate the sphericity index and the aspect ratio, which is the ratio of length and width. The results of physical characterization revealed that all of the pre-processing procedures studied have the seed's effects All of these metrics decreased in connection to roasting, save the sphericity index: length 19.00- 15.00 mm, breadth 13.00- 11.00 mm, thickness 10.75- 10.55 mm, and sphericity index 72.88- 80.20 percent. For all of the treatments used, the aspect ratio declined from 1.46 to 1.33 as pre-processing time increased. For the untreated seed, the kernel density (g/cm3), bulk density (g/cm3), and density ratio were 1.24, 0.73, and 0.59, respectively. However, following sprouting and autoclaving, the length increased from 19.00 to 24.00 mm, the width increased from 13.00 to 18.00 mm, and the thickness increased from 10.75 to 11.10 mm, while the sphericity index decreased from 72.88 to 67.46 percent. These outcomes are a crucial in the development of seed processing equipment, hence promoting the seed's industrial application. Other underutilised legumes on the point of extinction can benefit from these techniques.
