Meat probes were invented many years ago, attempting to
predict meat quality. Now they are used industrially in many countries to
predict the meat yield of pork carcasses with a feed back of information to
pork producers. The feed forward of information on meat quality is far more
difficult and as yet unreliable for industrial use. But meat probes may still
be used scientifically.
