Conventional and Innovative Extraction Methods of Phenolic Compounds from Cornus mas L. | Chapter 2 | Food Science and Agriculture: Research Highlights Vol. 2

Cornelian cherry (Cornus mas L.) fruits are included in the berries group as a rich source of health-promoting bioactive (phenolic compounds, anthocyanins, vitamins, carotenoids and carbohydrates) with a high antioxidant activity. In the present study, an illustrative overview of conventional and emerging extraction techniques of cornelian cherry fruits is presented to investigate the influence of the extraction conditions on the bioactive concentration. Given the importance of the environmental impact, in the last decade, emerging extraction methods have been applied. The main aim of our paper is to give special attention to the mechanism and principle of unconventional extraction methods, especially to ultrasound-assisted extraction and extraction assisted by natural deep eutectic solvents. The chapter reviews the therapeutic potential of Cornus mas derived from a rich composition of phenolic compounds. Different extraction conditions are reported to have revealed the great potential of cornelian cherry fruit extracts in the food industry, pharmaceutics, cosmetics, homoeopathic medicine and nutraceutics.
