Introduction to Food Chemistry Compiled by Okewole, Samson Ademola, Aribisala, Lukman Aderemi, Akande, Oluwaseun Olusola, and Olugbodi, Olumide Gbenga | Chapter 6 | Current Perspectives in Agriculture and Food Science Vol. 8

 

Food chemistry is a major aspect of food science that deals with the composition and properties of food and the chemical changes it undergoes during handling, processing, and storage. This chapter of the book defines food and food technology, gives adequate information on the origin of food, and technology involved in processing food into consumable product. Food origins are classified into two; plant and animal origin, examples and nutrient supply were given. The technology involved in processing these food sources to achieve the intended changes was discussed. It also gives practice questions for self-assessment which are made available at the end of the chapter.

Securing Tomorrow: Improving Worldwide Readiness for Biological Hazards | Chapter 7 | Innovations in Biological Science Vol. 1

 The negative predictions of many global organizations that assess the impact of the negative events looming on our planet, have traced worrying prospects of the risk we run, if we do not reverse economic policies-and the geopolitical balances between the various nations.

Pandemic, Urbanization, Political instability, Climate change, Food security, numerous hotbeds of war, adversely affect the global balance and quality of life that we risk turning into a point of no return.

Addressing these fundamental problems is not the task of this paper. Here we merely point out the risks we are running.

The aim of this work is to address the most pressing of problems, in addition to that of the war, and it is the food problem, both from a nutritional value point of view, both from the point of view of the technologies adopted by the food production industry, who pursue profit and not general welfare.

Development and Characterization of Cake Prepared With a Mixture of Mangalo Bean and Rice Flours | Chapter 4 | Current Research in Agricultural and Food Science Vol. 5

 The goal of this research was to create a cake using a combination of mangalo bean and rice flours. We created and tested four distinct cake formulas with varied percentages of mangalo flour (MF) and rice flour (RF) (0 percent MF + 100 percent RC, 10% MF + 90 percent RF, 20% MF + 80 percent RF, 30% MF + 70 percent RF). Microbiological, physicochemical, and sensory evaluations were carried out on a formulation containing 30% mangalo and 70% rice (p0.05). All of the parameters were within the suggested ranges. The cake's low lipid level, high fibre, iron and zinc content, and gluten-free status are just a few of its advantages. Acceptance was 86 percent, and purchase intention was 52 percent, according to our poll. We may infer that combining mangalo bean and rice flours is nutritious, well-accepted, and has high technical potential. In addition, the formulation under study promotes family farming and the traditional Brazilian diet.
